I talk about meal prepping all the time cause it is such a life saver when it comes to eating healthy on a financial budget and time limit. People constantly ask me how I manage to eat healthy through out the day and my answer is: prepare. Prepare your food for work/school ahead of time and eat like a champ throughout the week.
I’m always trying new recipes that can be cooked in bulk and put in the freezer for the following days and weeks. I usually cook Sunday evenings and prepare enough food for the week to come. This means meat and veggies for lunch and dinner. I spend about 2 hours cooking each Sunday and have enough leftovers to reheat during the weekdays. It’s the best!
This meatloaf is the perfect make ahead meal and it really is super-sized. It’s enough to feed an army. Or a large family. Or Kelsey Nicole for 2 weeks. With a little bit of complex carbs and a lot of protein, this meatloaf is not only super-sized, but also super-satisfying. Whatever you’re preparing for, I’ve got you covered with this healthy dish.
