After getting my wisdom teeth removed last week, I have been on the hunt for soft foods, aside from the usual ice cream and mashed potatoes (aka something healthy with micro nutrients). I had a couple ripe bananas sitting on the counter that I knew I wouldn’t be able to eat before they spoiled, so there was only one logical solution.. Bake! Bananas are an awesome substitution for oils and butter in baked goods. And due to the sweetness of bananas, you can even cut back on the amount of sugar in a recipe. Score!
So I spent this weekend watching Netflix, icing my face, and eating my weight in soft, delicious muffins. I love weekends when I have a good excuse to spend my days just like that.. I could have done without the dental surgery though ;)
